Locally-raised beef and pork

We sell sides and quarters of locally-grown beef and hogs, processed and prepared to your specifications. There are several advantages to ordering your meat this way: you support local farmers, you get the freshest meat, and your family saves money.

When you place an order, we’ll ask how you’d like it prepared and whether you plan to store it in our freezers, or pick it up all at once. 

Timing and dry-aging:

The beef we process in-house will dry-age in a cooler for 7-10 days before being cut, and can be aged for up to 2 weeks upon request. The reason we dry-age our beef is that it helps tenderize the meat. Cutting and packaging takes another several days, so each standard order takes approximately 2 weeks to complete, and could be longer if we have other processing already scheduled. We recommend calling in advance to make sure the timing of your order fits your family’s needs.

A note about quarters:

The cuts of meat in the front half of an animal differ from the back half. To be fair, we evenly divide the cuts between the two so that each quarter order has a selection of cuts from the entire half; this is also known as a “split half” and it will limit how you can have your order cut. However this applies only to quarters; if you order a half or whole beef, you won’t have to split cuts.
